How to store fresh milk and yoghurt in Accra's heat

Why does storage matter so much here?

Warm temperatures speed everything up, including the natural changes in fresh dairy. Keeping the cold chain — fridge to bag to fridge, quickly — is the single biggest thing you can do to keep milk and yoghurt at their best.

How should you store fresh milk?

Refrigerate it at 0–4°C as soon as it arrives, and keep it on a shelf rather than in the door, where the temperature swings each time you open the fridge. Pour what you need and return the bottle promptly. Enjoy it within about three days of delivery.

How should you store yoghurt, lassi and chaas?

Keep them refrigerated and tightly closed. Yoghurt is best within five to seven days; lassi and chaas, being drinks, are best within about three days. Always use a clean spoon so you do not introduce anything that shortens their life.

What about ghee and butter?

Fresh white butter belongs in the fridge and is best within a week. Desi ghee is different — it is shelf-stable, so a cool, dry cupboard away from direct sun is perfect, with no refrigeration needed.
